The choice of cake is yours. All fruitcakes are covered with marzipan and then professionally coated with a choice of royal icing or sugar paste. The choice of coating may depend on the design of cake chosen. For the best quality fruitcake, a minimum of 8 weeks should be given to allow the cake to be fed with brandy, although a shorter time frame is possible.
Typically, sponge cakes are filled with raspberry jam and butter cream. Chocolate sponges are classically filled with chocolate butter cream and apricot jam. If you wish to alter these specifications or use any alternative ingredients, I always do my best to accommodate the preferences of my customers.
Cakes are covered in white sugar paste as standard, although most other colours are possible. Handmade sugar flowers can be created to suit your cake design, silk or real flowers can also be used.
